Ingredients

  • 1 cup freshly squeezed lemon juice
  • 2/3 cup agave syrup
  • 4 tablespoons Angustifolia lavender bud
    (Do NOT use French lavender—it will not taste pleasant)
  • 3–4 cups water (does not need to be precise)
  • 2 liter container
  • Medium sized pot or saucepan with lid

Instructions

Step 1

Place approximately 4 cups of water in a saucepan or pot with a lid. Add the agave syrup and 4 tablespoons of lavender bud. Give the mixture a light stir.

Step 2

Place the pot over high heat with the lid on until it starts to boil. Once boiling, reduce to low heat and let it boil (covered) for 5 minutes.

Step 3

Turn off the heat and move the pot to a cool burner. Let it sit for 45–60 minutes.

The goal is to allow the steam inside the pot to cool, condense, and return to the liquid—enhancing the lavender flavor.

Step 4

Once cooled, place a fine mesh colander over a medium bowl. Pour the mixture through the colander so the lavender buds are separated and the liquid is collected.

Step 5

Discard the lavender buds. Add the lavender/agave mixture and 1 cup of fresh lemon juice into a 2 liter container. Fill the remaining space with cold water and stir well.

Step 6

You’re done! Pour over ice, relax, and enjoy the flavor and aroma.
